Today I’d like to share a hearty, nutritious homemade bone broth slow cooker recipe with you.

I’d love to say,

 

“It ain’t yo Gramma’s homemade bone broth recipe.”

 

…but it probably is! (Except for the electric slow cooker part.)

Yo Gramma most likely cooked her beef bone soup in a big pot and kept it simmering on the back of the stove. I know mine did! She also made homemade stock with chicken bones and lots of other goodies..

Anyway…in case you’ve been under a rock…there’s a big Bone Broth Trend going on these days. It seems people have re-discovered bone broth nutrition, and all the other bone broth benefits.

What Is Bone Broth?

Basically bone broth is the liquid that’s left after boiling animal bones in water, with the addition of herbs and aromatics such as onions and garlic.

What’s the difference between bone broth and stock?

It’s simple. There is no difference. Bone broth is stock.

Bone broth, stock, consomme, bouillon all basically boil down to the same thing – bone soup.

Most chefs agree that making stock with roasted bones that simmer for 12 or more hours is a time-honored tradition.

Where To Buy Bones For Making Bone Broth?

You can try your local supermarket or butcher to buy bones for making bone broth. Check out an Asian market near you and buy the boniest bones you can get – beef knuckles, chicken necks, oxtails, even chicken feet!

 

Best Bone Broth Slow Cooker Recipe

Ingredients:
2 pounds of bones (good quality)
1 medium carrot, peeled and chopped
1 medium onion, chopped
1 stalk of celery, chopped
4 cloves of garlic, peeled and roughly chopped
1 tbsp organic apple cider vinegar
sea salt
egg shells and vegetable ends (optional)

Directions:
Put the bones into a 3-quart slow cooker. The bones should fill your slow cooker up about 3/4 full.
Peel the garlic and vegetables and cut them up.
You can also add rinsed, crushed egg shells and vegetable scraps for added flavor. This will be strained out before you actually drink the broth.
Fill the slow cooker using filtered water.
Season the water with 1 1/2 tsp of sea salt.
Add 1-2 tbs organic apple cider vinegar.
Let the mixture sit for 1 hour so the vinegar will be able to leach the mineral out of the bones.
Set the slow cooker on the low setting and cook for 12-24 hours, just like Gramma did…

During the last 15 minutes of cooking, add some fresh parsley for extra flavor and minerals.
When finishing cooking, strain the broth using cheesecloth or a strainer and cool it.

The finished product will have a layer of fat on top. (Well done!) When it has cooled completely, it will turn to jelly.

You can remove the fat and use it for cooking or flavoring food.

In the United States, Fat Tuesday, is the day set aside for indulging before Lent begins. This is when you begin your eating frezy starting with Grandma’s Easy Homemade Polish Paczki recipe!

In some parts of parts of Eastern Europe, Fat Thursday (which is the last Thursday before Lent) signals the ending of the Carnival season. In Poland, it is known as Tlusty Czwartek.

Try this easy recipe for Polish Paczki! It’s pretty easy and so delicious!

 

Grandma’s Homemade Polish Paczki Recipe

 

Grandma’s Homemade Polish Paczki Recipe

Prep Time: 45 minutes
Cook Time: 6 minutes
2 rises: 3 hours
Total Time: 3 hours, 51 minutes

Yield: 2 dozen Polish Paczki

Ingredients:

1 1/2 cups warm milk (no warmer than 110 degrees)
2 packages active dry yeast ( proof yeast before you start)
1/2 cup sugar
4 ounces (1 stick) room-temperature butter
1 large room-temperature egg
3 large room-temperature egg yolks
1 tablespoon brandy or rum
1 teaspoon salt
4 1/2 to 5 cups all-purpose flour
1 gallon oil for deep frying
Granulated sugar (optional)
Confectioner’s sugar (optional)
Fruit paste for filling (optional)

Preparation:

Add the yeast to warm milk, stir until it is dissolved and then set aside. In a large bowl (or your favorite stand mixer fitted with paddle attachment), cream together the sugar and butter until the mixture is fluffy. Beat in the eggs, brandy and salt until incorporated well.

Add 4 1/2 cups flour alternately with the milk-yeast mixture. Beat for 5 (or maybe more) minutes by machine (or longer by hand) until it’s smooth. My grandmother beat the dough with a wooden spoon until it blistered. The dough will be very slack. If the dough is too soft, add remaining 1/2 cup flour.

Place prepared dough into a greased bowl. Cover it and let it rise until doubled in size.(Approx.1 to 2 1/2 hours)

Quick Tip: Punch down dough and let rise again to cut the rising time.

Turn the dough out onto a lightly floured surface. Pat (or you can roll) into 1/2-inch thickness. Cut out rounds with 3-inch biscuit cutter. Remove the scraps, then re-roll and re-cut. Cover. Let rounds rise until doubled in size. (30 minutes or more)

Heat oil to 350 degrees in large skillet or Dutch oven. Place the Paczki top-side down (it’s the dry side) in the oil, just a few at a time. Fry 2 to 3 minutes or until bottom is golden brown. Turn them over. Fry another 1 to 2 minutes or until golden brown. Don’t let the oil get too hot. It will brown the exterior before the interior is done. Test a cool paczki to make sure it’s cooked all the way through. Adjust cooking time and oil heat if needed.

Drain paczki on either paper towels or brown paper bags. Roll in granulated sugar while they are still warm.

 

Note: Poke a hole in the side of the paczki then, use a pastry bag, and squeeze in a dollop of a filling of your choice. Then dust the now-filled paczki with a little granulated sugar, confectioners’ sugar or a nice glaze.

* Paczki spoil easily, so eat them up the day you make them or freeze until another time.

Note: Always use caution when cooking with hot oil, especially around children.

Have a fire extinguisher designed for grease fires handy.

Best Loved Family Favorite Baked Holiday Ham Recipe for Easter

 

It doesn’t matter what time of year it is, Easter, Christmas or New Year’s Day, it’s always a good time to pull out your best loved family favorite baked holiday ham recipe.

In our family, my aunt and her daughter (my cuz) host the family Easter gathering.

We dye eggs the night before and serve them before Easter Brunch.

As part of our Polish heritage traditions, we have a little ceremony whereby we have a contest of cracking each others eggs until one winner claims victory!

Then we proceed to devour our favorite brown sugar and mustard glazed holiday ham!

This particular Holiday Ham recipe doesn’t sound especially Polish, but who’s to say it’s not how they baked a holiday ham in the old days…it seems that glazed ham recipes go back a long way…especially combined with some hearty Polish mustard!

 

Baked Holiday Ham Recipe for Easter

 

The traditional baked brown sugar glazed ham is not the only important part of the meal in our family.

We also serve traditional Polish kielbasa (both steamed and sauteed) and my Aunt’s glorious Kapusta (cabbage & mushrooms) recipe.

I’ll write a separate blog post explaining the kielbasa and kapusta another time.

We also serve up some kind of potato, usually mashed. and sometimes someone brings along scalloped potatoes…yum!

We like asparagus for the educated palettes, and green beans for those who prefer a more simple green. (like the children)

Best Way To Cook A Ham

Which ham shall I purchase?

Ham shank or ham butt?

Hint: The ham butt takes longer to cook.

If you can actually see the ham at time of purchase, the ideal is to look for ‘not a lot of fat’ other than what is on the outside of the ham.

If you can’t see it…I don’t know what to tell you…

Oh, yes I do…

 

Buy A Spiral Ham!

Want to make for a nice holiday ham?

Buy a Spiral Ham – It is already pre-cooked and cut!

A Spiral Ham comes with directions and its own glaze!! No mixing up hot sticky stuff!

So much easier to cook for your Easter Dinner, especially for a beginner.

And, it allows you to spend more time with the family.

The cooking part is easy. Basically, you’re just warmin’ it up while cooking at a
lower temperature so it won’t overcook and come out dry.

Best Brown Sugar Glazed Ham Recipe

(When taking a Spiral Ham out of the packaging, rinse off very well.)

Score the ham in a diagonal pattern with a sharp Chef’s knife. Repeat the scoring diagonally, in the opposite direction now, which creates a crossing pattern. Then, insert whole cloves at each crossing.

Place the holiday ham in a large roasting pan, flat side down.

Tent the ham with aluminum foil to cover it and seal all the edges
Place in the oven at 350 degrees.
Bake for 20 -30 min per pound, if roasting a ham that is not pre-cooked.
If using a precooked ham, follow the directions on the label for cooking times.

At 2 hour mark – remove the tent.
Use a baster and remove the liquid from the bottom of the pan.
Reserve to use for brown sugar glaze.

Glaze the ham with the easy Brown Sugar Glaze. (recipe below).
If desired, add pineapple rings and maraschino cherries to make it a Pineapple Glazed Ham Recipe.

Then, place ham back into the oven for the last half hour of cooking time.

Glaze the ham every 10 minutes during the last 30 minutes of roasting time. Serve remaining glaze with ham.

 

Real Good Cooking Tip:

Baste the ham with some pan drippings while glazing.

Easy Brown Sugar Glaze For Ham

3/4 C brown sugar
1/4 C of ham liquid
1/4 – 1/3 C yellow or brown mustard
1/2 C of orange juice

Directions:

Start with 1/4 C of ham liquid
Stir into brown sugar.
Add mustard and orange juice
Mix it all together.
Using a basting brush, baste the entire ham top to bottom.

 

Easy Brown Sugar Glaze For Ham at Easter

 

Pineapple Glazed Ham Recipe

Follow the recipe above.

At the 2 hour mark, glaze the ham, add pineapple rings and maraschino cherries and secure with toothpicks. Put back into the oven for the last half hour of cooking.

 

What To Do with Holiday Ham Leftovers?

Make a classic Holiday Ham Sandwich, of course.

 

Classic Ham Sandwich Recipe

Take a few slices of bread. Spread a little mayo and mustard on the slices.

Add thin slices of roasted holiday ham and a few pieces of lettuce.

That’s it!

I will dedicate this blog post about 7 Amazing Traditional Irish Soda Bread Recipes in honor of my ancient Irish roots and St. Patrick’s Day.

Frankly, I didn’t really know that much about my Irish heritage until a couple of years ago when my sister started to trace our family tree.

Then, we took a trip to Canada to visit St. John’s, New Brunswick, where our father grew up.

Who knew that our claim-to-fame would be that my great, great, great grandfather was the first person of Irish descent to be recorded in the Canadian Maritime records!

And he built a town. And a road is named after him! And we saw an antique schoolhouse that’s preserved for historical value bearing our family name.

Wow! Talk about tradition…

So today we’ll talk about traditional Irish Soda Bread, so named for the ingredient of baking soda, (sodium bicarbonate) and we’ll share with you some amazing traditional and authentic Irish Soda Bread recipes.

The traditional Irish Soda Bread recipe goes back a long way…but not way back to ancient recipes of Irish history like you make think.

In the mid-19th century bicarbonate of soda first became available for use as a leavening agent (instead of yeast) and soda breads began to appear in Europe.

The traditional ingredients of soda bread are flour, bread soda, salt, and buttermilk. Other variations include ingredients such as butter, egg, raisins, or nuts and caraway seeds.

Scones, griddle cakes and breads made with bicarbonate of soda and cream of tartar (tartaric acid ) became popular in Britain and Ireland as well as in Austrian, Polish and Serbian cuisine.

Authentic Traditional Irish Soda Bread

Typically, the flour is made from soft wheat in Ireland. Cake or pastry flour is the best to use when making traditional Irish soda Bread. It has lower levels of gluten than regular bread flour. Some recipes call for yogurt or stout instead of the usual buttermilk.

It is recommended by bakers everywhere to limit the amount of mixing time of the ingredients before baking! Don’t overwork it.

You should NOT knead the dough.

Here are some of our very favorite Irish Soda Bread Recipes:

 

1. My Favorite Irish Soda Bread Recipe

This recipe is my favorite (commercial) Irish Soda Bread recipe from the STOP & SHOP Food Stores. It always tastes just perfect to me.

Ingredients:

2 cups all-purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 Tbsp sugar
2 Tbsp cold unsalted butter
2 Tbsp cold vegetable shortening
1 large egg, beaten
1 cup buttermilk
1 cup currants

Directions:
Combine flour, baking powder, baking soda and salt in a large mixing bowl. Mix it well.
Cut in shortening and butter until the mixture is the size of peas.

Add buttermilk, egg and currants. Mix until all ingredients are incorporated well. Do not over mix!

On a floured surface, form a smooth ball with the dough.

Place ball of dough in a greased Dutch Oven, cast iron skillet or a 9 inch round baking or cake pan.

Score the top of the bread with a large knife to let the fairies out! Then, brush with a little buttermilk.

Bake for 40-45 minutes at 375 degrees F or until golden brown.

Let it cool on a wire rack. Do not cut the bread right away, as it might become gummy in the center. Let it rest for 10 minutes, then cut into slices, or tear into chunks.

Serve with rich Irish butter, of course! And your favorite jam or preserves!
