BABUNIA’S BABKA

From a Family Cookbook….

Visions of my Babunia (grandmother) making this delicious Babka – Homestyle European Raisin Bread…one of my favorite family recipes!

Putting together all the ingredients.

The magic of watching the dough rise in the bowl (placed strategically in a warm place on the back of the stove)

Smells so good while it’s baking!

Perfect for breakfast or snack.

Homestyle European Raisin Bread Recipe

BABUNIA’S HOMEMADE BABKA RECIPE

Ingredients:

1 pkg. yeast
1/4 cup warm water
2 cups milk, scalded
1/2 cup butter (1/4 lb)
1/2 cup sugar
2 tsp. salt
2 eggs
4 cups sifted flour
1 tbs grated orange rind
1 cup golden seedless raisins
4 cups (or less) sifted flour

Directions:

Add yeast to lukewarm water in a small bowl and set aside for five minutes or longer.
In a large mixing bowl, pour scalded milk over butter, sugar and salt.

When lukewarm, stir in softened yeast, eggs, 4 cups flour, orange rind and raisins.

Add remaining flour, first with spoon and then with hands.

Turn the soft moist dough onto a lightly floured board and knead
till smooth and elastic. Place in buttered bowl; and cover with warm,
damp cloth and place in warm place till double in size.

Punch down with fist, cover and let rise again till double.

Knead but slightly – using almost no flour on board and shape into two loaves.

Babka Cinnamon Twists

Babunia’s Babka Cinnamon Twists Recipe

For Babunia’s Babka Cinnamon Twists recipe, the dough is lightly rolled into an oblong piece,Babunia's Babka Cinnamon Twists spread with melted butter, cinnamon sugar and folded double.

The Babka Dough is then cut into one-inch strips, twisted and placed closely in a shallow baking pan.

Babka Loaves and Babka Cinnamon Twists are then covered and let rise till light.

** Babka Loaves are baked in 350 degrees oven 45 – 50 minutes.

*** Babka Cinnamon Twists are baked in 375 degree oven, 20 – 25 minutes.
