I see on my morning TV news show that Gwyneth Paltrow’s It’s All Easy Cookbook (for quick and easy recipes) is all about “Delicious Weekday Recipes for the Super-Busy Home Cook.”

Methinks, Oh, the rich and famous are just like us…

They like to get down in the kitchen and whip up something fabulous, healthy and delicious in no time at all!

 

Celebrity Cookbooks

I have to admit, I haven’t yet read the celebrity’s cookbook, It’s All Easy, by Gwyneth Paltrow, nor Gwyneth’s other cookbook, It’s All Good. (‘Tho I have read a few reviews of both cookbooks)

However, the recipe for Turkey Meatloaf that Gwyneth previewed on the TV show today looked like it was a quick and easy recipe.

I will share what she said about the turkey meatloaf recipe on the TV show, but the show did not reveal exactly how much of each ingredient was used.

So, if you’re a seasoned cook (pardon the pun), this recipe will be easy to figure out. For all other cooks or wannabes, you will have to buy the book to get the complete recipe.

Quick and Easy Turkey Meatloaf Recipe from Gwyneth Paltrow’s It’s All Easy

Combine turkey bacon, chopped onion, garlic and fresh thyme into a food processor.

Pulse until chopped up well. Do not process into a paste!

Put mixture in mixing bowl.

Add: oats, ketchup (does Gwyneth Paltrow actually know what’s in ketchup?), egg, milk, Worcestershire sauce, and salt. Mix it all up.

Add to ground turkey and mix all together.

Pat into loaf, place in baking pan. Coat top and sides of meatloaf with ketchup.

Bake 45 min.

Ta da!

We started off with making 2 of Martha Stewart’s recipes from her book, Martha Stewart’s Cookies.

 

One of Our Favorite Cookbooks - Martha Stewart's Cookies

 

The first cookie we made (and our current Favorite) was the Chewy Chocolate Gingerbread Cookie Recipe, (recipe below). This year we made a double batch. We made these last year and they were such a hit at the Christmas cooking party – we were eating them as quickly as they came out of the oven!  We also used Martha’s Sugar Cookie Recipe.

 

We recommend that you make the dough for the Chewy Chocolate Gingerbread Cookie Recipe the day before you plan on baking them, as it is a recipe with many stages – a labor of love.

 

Chewy Chocolate-Gingerbread Cookies

 

Martha Stewarts Cookies Chewy Chocolate Gingerbread Recipe

 

 

 

•    Yield: Makes 2 dozen

 

Ingredients:
•    7 ounces best-quality semisweet chocolate
•    1 1/2 cups plus 1 tablespoon all-purpose flour
•    1 1/4 teaspoons ground ginger
•    1 teaspoon ground cinnamon
•    1/4 teaspoon ground cloves
•    1/4 teaspoon ground nutmeg
•    1 tablespoon unsweetened Dutch-process cocoa powder
•    8 tablespoons (1 stick) unsalted butter
•    1 tablespoon freshly grated ginger
•    1/2 cup dark-brown sugar, packed
•    1/2 cup unsulfured molasses
•    1 teaspoon baking soda
•    1/2 cup granulated sugar

Directions:
1.    Line two baking sheets with parchment. Chop chocolate into 1/4-inch chunks; set aside. In a medium bowl, sift together flour, ground ginger, cinnamon, cloves, nutmeg, and cocoa.
2.    In the bowl of an electric mixer, fitted with the paddle attachment, beat butter and grated ginger until whitened, about 4 minutes. Add brown sugar; beat until combined. Add molasses; beat until combined.
3.    In a small bowl, dissolve baking soda in 1 1/2 teaspoons boiling water. Beat half of flour mixture into butter mixture. Beat in baking-soda mixture, then remaining half of flour mixture. Mix in chocolate; turn out onto a piece of plastic wrap. Pat dough out to about 1 inch thick; seal with wrap; refrigerate until firm, 2 hours or more.
4.    Heat oven to 325 degrees. Roll dough into 1 1/2- inch balls; place 2 inches apart on baking sheets. Refrigerate 20 minutes. Roll in granulated sugar. Bake until the surfaces crack slightly, 10 to 12 minutes. Let cool 5 minutes; transfer to a wire rack to cool completely.

 

 

These cookies are SOOO GOOOD…….

 

You have to try one right out of the oven.

“Use flour on utensils to keep dough from sticking: Dip the cookie cutters, and dust the spatula before transferring uncooked dough to a sheet. Rolling dough between two sheets of floured parchment will keep it from sticking to the rolling pin.”

The big Day is almost here! Thanksgiving!

 

We’ve been cooking and cooking. Can’t wait to dig into our Thanksgiving dinner with all the trimmings, and especially Grandma’s Apple Pie! Here’s the recipe. You still have time to make one yourself! It’s really easy to make America’s Favorite Thanksgiving Pie, the Apple Pie!

 

America’s Favorite Thanksgiving Pie – Apple

Grandma’s Apple Pie Recipe

 

Ingredients:

6 – 8 large tart apples

Pastry for 2-crust pie

1/2 Cup sugar

1/2 Cup firmly packed dark brown sugar

2 tsp flour

1/2 tsp nutmeg

1/4 tsp cinnamon

1/4 teaspoon allspice

1 tbs grated lemon peel

2 tbs butter

 

Directions:

 

Core and pare apples; cut in quarters, then slice thin. Line 9-inch pie pan with pastry. Mix sugars, flour and spices. Rub a little sugar mixture into pastry in pan. Arrange apple slices in pan, heaping slightly in center. Sprinkle evenly with remaining sugar mixture. Scatter lemon peel over surface, Dot with butter. Adjust top crust; trim edges, flute. Cut slits in center to allow steam to escape/. bake at 425 degrees for 40 to 45 minutes, or until apples are tender and pastry golden brown.
