How to Make Pumpkin Muffins | Pumpkin Muffins from Scratch

 

Early this October morning,

October Mist in the Morning

which was foggy, and drizzly, and damp and dank,

I wasn’t even thinking about how to make pumpkin muffins, let alone pumpkin muffins from scratch.

Really.

I was on my way out of the post office,

and I happened to go into (really, I couldn’t resist, the bakery there is so good! ;-))

the Cafe next doorjust to look….

and…

there they were…right before my eyes…they had Pumpkin Muffins!

I wasn’t really on the lookout for muffins of any kind – this was just a chance stopping by down at the market area.

I bought one. (But I only ate half of it, with a little whipped cream cheese. I’m saving the rest for later.)

So, now I’m in the mood to make a few homemade pumpkin muffins from scratch. Not only do I love the taste of pumpkin spice muffins, I absolutely love the smell of the muffins cooking…all those delicious spices and aromas filling the air…

I’ve combed through some recipes, and I finally found this one below, stuffed in an old Fannie Farmer cookbook. Brings back lots of memories.

COOKING LESSONS FROM MY FATHER

Mostly, I remember cooking lessons from my father. Especially learning how to bake. In fact, whenever I start to bake something, I can hear his voice in my head,

 

 

“Read the recipe twice.”

 

 

That was one of his mantras. About baking.

 

HOW TO BAKE

1. Read the recipe twice – so there are no surprises!

Then,

2. Place all of the ingredients out in front of you – so you can be sure you actually have all of the ingredients – and they are within easy reach. (Just like they do in cooking shows on TV!)

3. Follow ALL instructions.

4. Use, and put back. (One of his other Mantras. He was a very neat baker.)

5. And, most important…Have FUN while baking!

We always had a blast when cooking together. One of our favorite family meals on a Saturday night was: Homemade Strawberry Shortcake – with real whipped cream!

That’s right! For dinner! Soooo good. (I’ll save that recipe for another blog)

Here’s a traditional recipe for Pumpkin Spice Muffins, it’s quite moist and delicious.

If you’re interested in a more healthy Pumpkin Muffin recipe, watch the ‘How To Make Healthy Pumpkin Muffins Video’ below. The video recipe uses all those ‘good for you‘ ingredients, and creates more of a Pumpkin ‘Bran’ Muffin because it contains unprocessed wheat bran.

In addition to the bran, the pumpkin muffin recipe includes whole wheat flour, pumpkin puree, raisins, buttermilk (or yogurt), and oil (which contains less saturated fat) instead of butter.

 

HOW TO MAKE PUMPKIN MUFFINS FROM SCRATCH

 

Moist and Yummy Pumpkin Spice Muffins

   Pumpkin Muffins from Scratch

 

PUMPKIN SPICE MUFFIN RECIPE

Muffin Ingredients:
1 1/2 cups All-purpose Flour
1/2 cup Sugar
2 teaspoons Baking Powder
1-1/2 teaspoon Cinnamon
1/4 teaspoon Ground Ginger
1/4 teaspoon Ground Allspice
1/2 teaspoon Nutmeg
1/2 teaspoon Coarse Salt
4 tablespoons Butter, cut into pieces
1 cup Pumpkin Puree
1/2 cup Evaporated Milk
1 Egg – whole
1-1/2 teaspoons Vanilla extract
1/2 cup Golden Raisins or cranberries (optional)
1/2 cup Walnuts, chopped (optional)

Instructions:

Preheat oven to 400 degrees. Generously grease 12 muffin tins. (or line with paper liners)

Sift flour, sugar, baking powder, cinnamon, ginger, allspice, nutmeg, and salt into a mixing bowl. Cut in butter with two knives or a pastry blender until it is fully incorporated.

In a separate bowl, mix together pumpkin, evaporated milk, egg, and vanilla. Pour pumpkin mixture into the flour mixture. Add raisins or cranberries/nuts. Fold gently until the mixture is just combined.

Pour it into a greased muffin pan. (or use paper liners) Sprinkle with remaining cinnamon-sugar-nutmeg mixture over the top of each unbaked muffin.

Bake for 25 minutes. Allow to cool in pan for 15 minutes, then remove and allow to cool. Top with cream cheese frosting, if desired.

Muffin Topping
2 Tablespoons coarse Sugar
1 teaspoon Cinnamon
1/4 teaspoon Nutmeg

CREAM CHEESE FROSTING RECIPE

Cream Cheese Frosting on Pumpkin Muffins from ScratchIngredients:
1/4 cup Softened Butter
4 ounces Cream Cheese
1/2 pound Powdered Sugar
1/2 teaspoon Vanilla extract

Frosting Instructions:
To make the frosting, mix all ingredients on high until soft and whipped. Spread onto completely cooled muffins, or place into a large pastry bag with a large star tip and decorate. Store it in the fridge, as icing will soon soften at room temperature.

(For Orange Flavored Frosting: Add 1 teaspoon grated orange zest
1/2 teaspoon pure orange extract)
