Homemade Red Bliss Potato Salad as a Side Dish

Potato salad is a popular side dish consisting of boiled potatoes prepared in many different versions from regions all over the world. Both White and/or Red potatoes are used in making a potato salad.

Even though we call it a salad, potato salad is considered a side dish, because it is usually served alongside the main course.

You’ll find that Potato salad will be served with not only hamburgers and hot dogs, but also with BBQ, fried chicken and cold sandwiches.

Homemade Red Bliss Potato Salad is popular, not only because it tastes so good (and it’s so good for you!), it

● uses inexpensive ingredients
● it is easily prepared in advance
● and can quickly be made in large quantities

Simple Homemade Red Bliss Potato Salad Recipe

Ingredients For Red Bliss Potato Salad:

Typical basic ingredients for homemade Red Potato salad include:

3 pounds cubed, boiled red potatoes
1 teaspoon white or apple cider vinegar
● 1/2 cup mayonnaise (We hear Duke’s mayonnaise is awesome!)
● 1 cup yogurt or sour cream
2 teaspoons Dijon mustard or 1 tsp mustard powder (dry mustard)
● black pepper
● salt

Directions:

Place the red bliss potatoes in a large stainless steel pot with enough water to cover. Bring them to a boil, then reduce heat to a simmer and cook for about 10 minutes, until potatoes are easily pierced with a fork. Drain, then transfer to a large bowl to cool. Sprinkle the vinegar over the red potatoes while they are still warm.

In a medium bowl, mix the sour cream, mayonnaise, mustard, salt and pepper.

Add any of the following ingredients to suit your tastes and then, season as you wish:

● eggs, celery, pickles, green onions, hot sauce

● dill, parsley, garlic powder, onion powder

Pour the mayonnaise mixture over the potatoes, and gently toss to coat. Chill for 3 hours in the refrigerator before serving.

** We served a classic red potato salad combo of parsley and scallions with salt and pepper for our table over the holidays!

    This is a great recipe for summertime because I can take it to picnics and feed larger crowds on a budget. Potato salad is one of my favorite side dishes ever. My grandma used to make it for us all the time. Store-bought is so gross!

    It’s not a BBQ if there is no potato salad to accompany it! And, as an avid spud lover, I am guilty of having potato salad sandwiches with any leftovers. It’s got to be home-made!
