Fennel for Italian-style Sausage and Peppers and Onions

QUICK AND EASY ITALIAN-STYLE SAUSAGE AND PEPPERS AND ONIONS FATHER’S DAY DINNER RECIPE

Ingredients:

6 (4 ounce) links sweet Italian sausage
2 tablespoons butter, (or 1 Tbs butter and 1 Tbs olive oil)
1 yellow onion, sliced
1/2 red onion, sliced
4 cloves garlic, minced
1 large red bell pepper, sliced
1 green bell pepper, sliced
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 cup white wine or chicken stock

Directions:

Place sausage in a large skillet over medium heat on the stove, brown on all sides. Remove from the skillet, and slice.

Melt butter/olive oil in the skillet. Stir in yellow onion, red onion, garlic, cook 2 to 3 minutes. Mix in the red bell and green bell peppers. Season with basil, and oregano. Stir in white wine or chicken stock. Continue to cook, stirring until peppers and onions are tender.

Return the sliced sausage to the skillet with the vegetables. Reduce the heat to low, cover, and simmer for 25 minutes, until sausage is heated through and the vegetables are soft.

COOK: 25 min
READY IN: 40 min

Here’s a variation of this Father’s Day Dinner recipe using a Dutch Oven and adding a can of crushed tomatoes!

 

USE A DUTCH OVEN TO COOK ITALIAN-STYLE SAUSAGE AND PEPPERS AND ONIONS

First, while the sausage is cooking in the skillet,  put the crushed tomatoes  (14.5 oz). in a Dutch Oven on low.

After cooking and slicing the sausage, add to the Dutch Oven.

Saute the onions and the garlic. When tender, add the peppers and onions.  Place all the vegetables into the dutch oven, add wine or stock, and let everything simmer on low for 2 hours.

It’s easy to double or triple this recipe for a party!  Simple, easy and economical. You do the math!

Real Good Cooking Tip:

If the sauce is a bit loose, add  a tablespoon of cornstarch mixed with a tablespoon of water, and add it in with everything else.
