Best Beef Stew Crockpot Recipe

 

Ahh, this time of year (Autumn and Indian Summer here in the North East) makes me want to delve into my crockpot recipe book and cook up one of my favorites: the Best Beef Stew Crockpot recipe.

 

I love my crockpot. Crock-Pot SCVT650-PS 6-and a half-Quart Programmable Touchscreen Slow Cooker Stainless Steel

 

The crockpot, called a ‘slow cooker‘ in some circles, is one of the best time saving appliances in the kitchen.

It’s great for beginner cooks and seasoned (pardon the pun) professionals alike, because all you have to do is fill it up, turn it on, and a few hours later, your house is filled with wonderful aromas and dinner is ready for the table.

 

Here’s the recipe…Hope you enjoy it!

Serves 6

 

Ingredients:

2 lbs beef stew meat, cut in 1″ cubes
1/3 cup all purpose flour
1/2 tsp seasoned salt
1/2 tsp ground black pepper

2 cloves garlic, minced
2 bay leaves
1 tsp paprika
1 tsp dried thyme
1 TBS Worcestershire sauce
1 onion chopped

1 1/2 cups beef broth and 1/2 cup red wine (optional)
or 2 cups of beef broth

3 potatoes diced
4 carrots, sliced
1 stalk celery, chopped
1 cup frozen peas

Olive oil

 

Directions:

1. Place flour, salt, pepper mixture into gallon-sized, zippered bag. Shake beef in bag to coat. Sauté coated beef in 1-2 tablespoons olive oil until browned. Add chopped onion to beef to sauté and soften. Transfer to slow cooker.

2. Mix beef broth with 1 TBS Worcestershire and ½ cup red wine. Pour into hot skillet to deglaze, then pour over beef and onions in cooker.

3. Stir in the remaining ingredients.

4. Cover, and cook on Low setting for 10 to 12 hours, or on High setting for 5 to 6 hours.

*** You may use a packet of dry onion soup mix in place of all the spices.

 

Tips and Tricks:

~ If your crockpot does not have a removable dish, use a crockpot liner to help with cleanup.

~ Fill the crockpot at least halfway full but no more than three-quarters of the way full. You need to have some room at the top of the crockpot for the steam to move around.

~ Food on the bottom of the pot will cook faster and be more moist. It’s usually recommended that vegetables be placed on the bottom, and meat on the top.

~ Stir in spices in the last hour of cooking. They will lose flavor if cooked with the rest of the ingredients for the long cooking period.

~Ingredients such as heavy cream, cheese or shellfish should be added during the last 30 minutes of cooking, unless stated otherwise in the recipe.

 

With this recipe and a crockpot, your home will smell fabulous all day long, and this meal will be a savory feast!

 

Serve the stew in bowls, accompanied by slices of fresh, crusty bread. Or serve with corn bread and Cole slaw.
